Gotham Eateries Go Green, Industry Strives for Sustainable Standards

This week’s issue of Crain’s profiles a number of New York City restaurants that have implemented sustainable initiatives across their facilities and operations. It’s significant that as mainstream a publication as Crain’s is noting local eateries joining the green movement, but the press comes with good reason. According to Crain’s, the Boston-based Green Restaurant Association has certified 55 Gotham eateries to date, up from a mere 1 back in 2001; over a quarter of all the GRA-certified restaurants in the country can now be found here in New York City. As the high price of food cuts into restaurants’ profits, owners are finding ways to trim expenses through reduced energy costs.

Monday LEEDoff: A Peek at Brooklyn’s First Living Wall in Williamsburg

Consulting team Sphere Trending recently posted some photos on its blog of the Oulu Bar & Eco-Lounge in Williamsburg, home of Brooklyn’s first living wall. The wall covers the front façade of the 2500-square-foot building, which is aiming for LEED Gold certification and was designed by architect Evangeline Dennie. Dennie has some amazing installation photos of the vegetal wall in her online portfolio. Having dealt with these kinds of wall installations a little myself, I can tell you they’re not easy to mount or maintain, so my hat goes off to Dennie for making this one look so good. Some of Oulu’s other green features include biodegradable ceramic tile on the walls, water-based grout sealer in the bathrooms, natural Mica panels promoting light exchange, sheetrock exterior walls made of recycled material and post-consumer recycled paper, and a garage door that provides natural ventilation.

Restaurant Leases Last Remaining Retail Space at N.Y. Times Tower

The New York Times Tower on 8th Avenue between 40th and 41st Streets, which earned a spot at #2 on gbNYC’s list of the top five Gotham green buildings from 2007, has secured a tenant for the fifth and final retail block in the non-LEED-certified green building. The 3,200-square-foot space will house a new restaurant concept from Andrew and Jonathan Schnipper, the brothers whose Hale & Hearty Soup chain is now ubiquitous here in Manhattan. The eatery will offer a casual American menu that will be “an evolution of the roadside stand we all knew growing up,” according to Andrew Schnipper.

Green Franchising: Subway Opens Eco-Store, Reviews Product Sourcing

It’s hard to walk more than a few blocks in Midtown without passing a Subway, so even though an announcement that the chain has opened its first “Subway Eco-Store” (no word yet on whether Subway has applied to trademark the term) originates from Florida, the news has much broader implications for sandwich lovers everywhere. Subway […]
